Organic Summer squash comes in many different varieties. While each type varies in shape, color size and flavour, they all share some common characteristics. The entire vegetable, including its flesh, seeds and skin is edible; in addition, some varieties of the summer squash plant produce edible flowers. Summer squash are fragile and cannot be stored for long periods of time. Look for ones that are heavy for their size and have shiny, unblemished rinds. The rinds should be firm to the touch but not hard.

While each type varies in shape, color, size and flavor, they all have hard protective skins that are difficult to pierce; this gives them a long storage life. There flesh is mildly sweet in flavor and finely grained in texture. Choose ones that are firm, heavy for their size and have a dull, not glossy, rind. The rind should be hard. Organic winter squash is abundant in beta-carotene as well as potassium, vitamin C, fiber and folate.
